Peanut curry

It looks amazing – yes, we know ☺  It's a real feast of flavors and colors. It can be served with rice, as we did, or with boiled or baked chicken. It is also a wholesome, healthy dish by itself.

Components:
  • A jar of chickpeas
  • half a zucchini
  • half a pack of mushrooms
  • 3 young spring onions
  • 3 carrots
  • 1 chili pepper
  • 4 tbsp Smooth Peanut Butter
  • 1 lime (grated zest + juice)
  • 1 tablespoon chopped fresh cilantro
  • curry spice
  • can of coconut milk
  • frying oil
  • 2 cups of jasmine rice
  • 4 cloves of garlic
  • salt
  • pepper
Preparation:

Garlic, chili and onion cut and fry in a hot pan

add carrots, zucchini, lime and spices

 Stew everything until the vegetables are tender

blend the Smooth Peanut Butter with lime and coconut milk in a bowl

 pour all the sauce into the pot and simmer it under the cover for a while

 finally add the chickpeas

in the meantime, prepare the rice according to the instructions on the package

 finally sprinkle with fresh coriander
